Here is a quickie for you…(and not the kind you are thinking of! 🙂 Bil and I love this one when it is just the 2 of us for dinner!
Sausage and Peppers
1 pkg sausuage (..my choice, what else? Oktoberfest Sausage 🙂
1 28oz can diced no salt tomatoes
1yellow pepper cut into chunks
1 red pepper cut into chunks
1 onion cut into wedges
2 tbsp olive oil
2tbsp red wine vinegar or balsamic
Mix all ingredients in a casserole dish but the sausage. Place sausage on top and bake for about 1 hour. Serve with nice warm crusty bread to soak up all the juicy bits.
