Healthier Chocolate Chip Cookies

What’s that you say?  A HEALTHY-ER Chocolate Chip Cookie?
Is such a thing even possible?  It sounds too good to be true!

Let’s be honest, we’re all baking more during this worldwide Isolation period.  I don’t know about you, but even I can only take “so much” dessert, sweets and cake.  Between my daughter and I, I’ve had to set some gentle “guidelines” about what we can and can’t bake for awhile…because we are BOTH baking!  Yikes!

Rules are (so far…):
-no more cake for at least a week 😉
-must be low(ish) sugar
-would be awesome if it contained fruit of some description
-must contain some kind of nutrient dense ingredient (ie: nuts/seeds, fruit, yogurt, beans/legumes…)
-must still be delicious

Anything you’d add?

Hence…the development of the world’s best Healthy-er Chocolate Chip Cookie.  You can thank me later!

This was adapted from one of the Chipits Original Recipes. My Mom always baked them for us when we were kids.  My sister still bakes them with her kids too. They’re just Chocolate  Chip Oatmeal Cookies, with a few nutrient dense, real food additions.  I like them just as well as the original–but they have half the sugar, far more fibre and are packed full of nutrients and love.

Healthier Chocolate Chip Oatmeal Cookies
1 cup soft butter
1/2 cup sugar
2 eggs
1 1/2 cups flour
1tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
3/4 cups quick cooking oats
1/4 cup wheat bran or wheat germ–whatever you have on hand
1/4 cup ground nuts (I used ground pecan, but almond or walnut would work)
1/4 cup hemp seed
1 tbsp each flax seed and chia seed
2 cups chocolate chips

Cream butter and sugar well.  Add eggs and continue to cream really well.  Stir together flour, soda, salt and cinnamon.  Gradually stir into creamed mixture.  Add oats, seeds, bran and ground nuts.
Lastly, add the chocolate chips.

Drop by tablespoons onto ungreased cookie sheets.  Bake at 375 degrees 9-11 minutes.
