Spanish Rice
What if… you had a very limited food budget–(like $25 per person in your household per week–or less).
What would you change?
How much of what you buy now, would you make from scratch instead? How much waste would you avoid–because you just can’t afford to throw food away? How would you make the most of every penny spent? How much of your current grocery shopping habits would change? Would you change the way you eat?
Just a little food for thought…

Spanish Rice
2tbsp oil
1 cup rice
1 onion chopped
1/2 red or yellow pepper chopped
2 cups water
1 10 oz can diced tomatoes
2 tsp chili powder
salt to taste
Heat Oil. Saute rice, onion and pepper until rice is browned and onions are tender. Stir in water and tomatoes. Add chili powder and salt. Cover and simmer for 30 minutes or until rice is cooked and liquid is absorbed.
Tip: this rice is great served on the side with sausage or chicken, or add a can of black beans while simmering for a great vegetarian meal.
