First full week of summer. Last week of school. Strawberry season. Week before summer holidays. Preparing for next Open House (July25th…). Busy. Full. Beautiful.
Only time today for a quick post…this recipe is one of my favourite summer desserts. It’s so easy to prepare, can be made the day before and you can use just about any fruit you like (but the strawberry is my favourite!!)
1 box graham wafer crackers
1 lt whipping cream (whipped with a little sugar or vanilla added)
3/4 cup chocolate chips
3 tbsp cream
1 quart ( or more if you like….) fresh strawberries, sliced
Melt chocolate chips and whip in the cream. Set aside.
In a 9×13 pan, spread a small amount of whipped cream. Place a layer of graham wafers over and then top with a generous amount of the whipped cream. Place 1 layer of strawberries, close together over the whipped cream and drizzle 1/3 of the chocolate over . Layer another graham wafer, whipped cream, strawberries, and chocolate 2 more times. Finish with one more layer of graham wafers and whipped cream. Make sure the last layer of whipped cream covers the sides of the “cake” and the chocolate drizzle is pretty! You can save a couple of berries to place on the top of the cake to make it pretty too, if you like 😉
This cake needs to sit at least 4 hours before eating, to soften up the crackers…so plan accordingly!
