Easy, Tasty, Versatile!

If you also follow me on Facebook, you’ll know that I was trying a new Refried Bean recipe last week. (…and if you aren’t following me on Facebook yet–Why the heck aren’t you?!) It’s easy, click the button to your right, while your at it, click the Twitter button too! xo

In any case, I did try it.  It was a BIG hit all round.

  • Easy.
  • Tasty-even better the next day.
  • The recipe as shown made enough for a couple of meals ( I love multiple mealing!).

Overall a pretty versatile recipe, we made burritos with homemade tortillas, but it was also good as a vegetable and tortilla chip dip!

refried beansCrock Pot  Refried Beans
–refried beans aren’t particularly pretty, but they are delicious!

Combine in a crock pot:
2 cans pinto beans, drained and rinsed1 med onion chopped fine
2 cloves garlic, minced
juice of 1 lime
1/2 cup water
2 tsp cumin
2 tsp chili powder
1/2 tsp crushed chilies (or more depending on how hot you want them)cracked pepper

Cook on high for 3-5 hours (or low for 6).  Mash bean mixture with a potato masher until desired consistency is reached.  That’s it!  SO easy!
