Compared to who?

I had a great visit with a friend today and we had a big discussion about how the internet, blogs, facebook and pinterest can sometimes inadvertently add to our cultures obsession with comparing our lives to others.

We have this “sickness” that forces us to constantly compare what we do and how we live with people/families/someone else’s standards…it’s like keeping up with the Jones’ but at a much more personal level…I suck at being a parent because…(fill in your own blank here…I’m not good at crafting with my kid, I’m not a good storyteller, I work full-time, I don’t bake muffins, I don’t…)…I suck at…(fill in this blank too, decorating, cooking, knitting, gardening….)

I don’t know why (collectively) we always feel like we aren’t good enough at what we do, why we feel like we always need to be great at everything, why we feel like our  gifts aren’t enough, why we need to constantly do more/better than everyone else...but I do know that we always have a choice.
We can always choose whether we continue to subscribe to the constant comparing or whether we choose to celebrate our gifts, the gifts of others and choose to be inspired by what others are doing instead of feeling discouraged that we aren’t doing it too…

So here’s to being inspired!  Here’s to celebrating what you already really great at!  Here’s to making a choice!  My biggest hope is that I inspire you…xo

Palpettos

Beef  Palpettoni Stuffed with Rice

  • 1 cup cooked rice
  • 1 lb.  ground beef
  • 1 egg yolk
  • salt and  pepper
  • 3/4 cup creamy onion dip (like Epicure 3 onion)
  • 1 1/2 cups tomato sauce
  • 1 cup shredded  cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. dried oregano/marjoram or thyme leaves

 Mix ground beef, egg yolk and S&P. On waxed paper, divide beef mixture into 4 4×6″ rectangles, patting gently to form into shape.

In small bowl, combine cooked rice with onion dip. Divide rice mixture over ground beef rectangles, spreading evenly. Roll up the rectangles, starting with 4″ side, to enclose rice mixture, using waxed paper to help roll (be sure to not roll the waxed paper into the meatloaves!). Top with  tomato sauce, then grated cheese, parmesan and oregano.

Bake at 375 for approx 35-45 minutes or until fully cooked.
