Easy, Fast Strawberry Ice Cream!

It’s. So. Hot.

I did a little grocery shopping last night and decided it was time to have a little ice cream treat…I even had it in my cart.  Then, I looked at the ingredient list and it ended up back in the cooler.  Too bad, it would have tasted really good.

Knowing what actually needs to go into  ice cream, and knowing what the food manufacturers put into ice cream are 2 radically different things.  It’s unfortunate that even some of the “smaller” dairies are adding all kinds of extra/inexpensive junk to their products. (like artificial colours and flavours, modified milk ingredients, guar gum, xanthan gum, extra sweeteners etc..)  Too bad.  I’d buy ALOT more ice cream if it wasn’t so full of things I’m trying to avoid.

3 ingredients.  Really.  That’s it

This is fast, easy, good for you, delicious.  Just wait–you’ll have to try it a few days in a row…just to make sure it’s as good as it was the first time.

Easiest 3 Ingredient Strawberry Ice Cream

2 cups frozen strawberries
2 cups heavy whipping cream
5 tbsp (or more to taste) icing sugar

Combine the ingredients in your food processor and pulse until well combined and thick. It will be the consistency of soft ice cream.  Stick it in the freezer if you want it to firm it up a little.  That’s it.  Can you believe it?

Tip:  I’d imagine this would be good with any multitude of frozen fruit–bananas, peach, blueberry, strawberry rhubarb…I think the possibilities could be endless…let me know what you try out, and how delicious it was!

  • Oooh. One could do this with a can of coconut cream instead for a vegan version — I’ll let you know if/when I try it out!

    • That is an excellent idea!! I may just have to try that this weekend–I can’t believe I hadn’t thought of it 🙂
